Many of this modern bakery’s most popular items are cream cheese-based, such as a gingersnap cookie sandwich stuck together with a thick layer of cream cheese frosting. Peanut butter cookies also hug the good stuff. Hate cream cheese? It’s okay. Try the morning bun: sweet challah with apple butter jelly rolled into its center, drizzled in butter and doused in cinnamon and sugar. Pinkie’s has a salty side, too, best seen in its assorted savory brioches; bits of bacon are baked together with cheddar cheese and onion. Vegetarian options include brioche with ricotta cheese, garlic and spinach. And chocolate lovers will go for the signature cupcake: Devil’s Food cake decked out with a generous helping of bittersweet ganache and sea salt. There are even treats for Fido: leftover bacon fat is combined with whole-wheat flour and egg whites to make gourmet dog bones (that look as tasty as the fare for humans).
