Chef Juan Jose Cuevas (Alain Ducasse at the Essex House, Jardinière in San Francisco) offers a menu that changes often to accommodate the seasons. He prepares tempting dishes such as “Surryano” ham-wrapped monkfish served with Brussels sprouts napped with pistachios and black truffle vinaigrette, and organic buckwheat pappardelle under his osso buco with fennel, tomato, Parmesan and gremolata.
