Don't let the long line snaking out the door of this hip taqueria deter you. Everyone is waiting for tacos made with an array of local, sustainably-procured and seasonal ingredients, which include Draper Valley Farms chicken, Carlton Farms pork and line-caught fish. Order generously and share to sample the best the kitchen has to offer. A pescado taco fills a handmade tortilla with fried snapper encrusted with spicy cornmeal, crema, cabbage, salsa verde, onion, cilantro and tropical fruit. Carnitas are simpler but just as good with tender pork, salsa verde, onions, cilantro and local queso fresco. Barbacoa features brisket braised inside banana leaves. The menu also includes taco alternatives such as ceviche, tamales and quesadillas, plus "Bryan's Bowl," a combo of beans, rice, salsa, queso fresco, guacamole and cilantro, plus optional proteins.
