There are some restaurants that are minimalist in décor but have clearly paid attention to detail. Range is one of them. There's a whimsical stainless steel Blood Bank case at the bar (it houses a selection of fine spirits and Champagnes), a voyeuristic window that lets you peek into the kitchen, and professional staff that delivers small ramekins of salted butter. Dine up front at the tiny but bustling bar, or relax in the back dining room with its Scandinavian sleek-meets-rustic vibe. Dishes are quite thoughtful: slices of juicy and pink pepper-crusted venison arrive fanned out on a plate and are accompanied by an enticing salad of roasted pimiento peppers and Asian pears. Scallops diablo are similar to a gratin of French chowder, rich and stew-like. Halibut comes in a petite red pot, a savory-sweet mix of tomato, fennel and couscous under a topping of crunchy almonds and dusky olive tapenade. Slow-roasted coffee-rubbed pork shoulder is sumptuous, served with chard and creamed hominy, a nice alternative to beans or mashed potatoes. Satisfying desserts include a shortcake-like cobbler, and pistachio waffles with caramel gelato always come with a surprising --- and enjoyable --- twist.
