Raji Jallepalli opened her restaurant in 1989 to serve classic Indian fare but within two years had turned herself into a pioneer of French-Indian fusion. As such, shes better-known in New York and Paris than in Memphis. Eating at Restaurant Raji can be transporting, but it involves some risk. Jallepalli prepares a different four-course menu every night. There are no choices. The price is $45 or $65 with glasses of wine for each course; the latter is not necessarily a bargain because the wine list desperately needs refurbishing. Sometimes the balance, the ingenuity is off. That said, well insist that some of the greatest dishes of our lives were eaten at Rajis. Examples from recent menus: Corn and chestnut soup with lobster tail; consomme of green apricots with shrimp; sea bass with tamarind glaze, caramelized onions and crispy bacon; tapenade-stuffed squid with fire-roasted bell peppers; filet of grouper with summer truffle emulsion; foie gras with red and white grapes, toasted walnuts and dark rum; and---hold your breath---bleu cheese crème brûlée.
