When chef Mark Fischer opened Six89 in the up-and-coming enclave of Carbondale, just a short jaunt down valley from its Aspen neighbor, foodniks took notice---and with good reason. This restaurant, occupying a renovated Victorian home, is on target with its smorgasbord of small plates, professional service and charming patio. Fischer's menu, a global romp of foodstuffs, peddles flavor-bombed dishes like the herb-roasted Alaskan halibut haloed with English pea coulis and sided with a carrot-potato cake and a pea sprout and carrot salad. The roster changes seasonally and Fischer is a stickler for utilizing locally sourced ingredients. We recommend the asparagus raviolis floating in a tarragon-laced broth fragrant with Reggiano, the truffled french fries dusted with Parmesan and the barbecued rabbit tostada topped with white beans, feta and lime crema. The wine list intrigues with a slew of small local Colorado producers. Snag a seat in the bar to banter with the local fray and brush up on your culinary terminology while studying the menu's irreverent lexicon of ingredients.
