Come dinnertime, it may be hard to convince your friends to forego flashier venues for Circus Circus, but if you're in the neighborhood, this is the place to dine. The instant you leave the glitz of the big-top-themed casino floor, a glass-enclosed cold-storage display brimming with Midwestern beef, dry-aged here for 21 days, announces your arrival at a serious steakhouse. Hunker down in a leather booth and enjoy a steak that’s been broiled over an open-hearth with mesquite charcoal. All dinners come with black bean soup or the house salad, and a choice of garlic mashed potatoes, baked potato or rice pilaf. Among à la carte appetizers are grilled garlic shrimp (also offered as an entrée) and Caesar salad. Steak choices are porterhouse, prime rib, New York strip, bone-in rib-eye and filet mignon. Among other choices are chicken breast, halibut, lamb chops and lobster tails. The chef’s choices of freshly baked dessert creations vary daily.
