Winemaker Steve Shaw has spent over 30 years pursuing his passion for wine in New York's Finger Lakes region. He founded his namesake winery in 2002 with a focus on showing America that the region's climate and soil can be suited to making world class wine from the noble grape varietals. Currently, the winery produces Riesling, Chardonnay, Sauvignon Blanc, Gewürztraminer, Pinot Noir, Cabernet Franc, Merlot and Cabernet Sauvignon. On the nose, the 2006 Cabernet Sauvignon offers raspberry aromas with hints of chocolate and espresso. Its flavors are of raspberry and tart cherry fruit with pomegranate acidity. A medium-length finish offers a touch of caramel. Restrained for American Cabernet thanks to the Finger Lakes' temperate climate, the wine is notably food-friendly. Try it with summer foods like grilled chicken or loin of pork, pasta with seasonal vegetables and Italian sausage in a red wine sauce or a traditional ratatouille. For a more elegant meal, try it with venison in cherry sauce, or for something simple, a plate of aged, cow's milk cheeses.
