Champagne Taittinger Prélude is produced exclusively from Grand Cru vineyards. The fermentation takes place under temperature-controlled conditions. The final cuvée undergoes the second fermentation in the bottle in Taittinger’s cool cellars. The wine is aged for five years on the lees, as opposed to the required minimum of one, to develop body and bouquet.
The pale yellow color with silvery reflections indicates the high proportion of Chardonnay. On the nose: subtle and fresh, with mineral aromas giving way to notes of elderflowers and spicy cinnamon. In the mouth: lean mineral Chardonnay notes balancing the aromatic strength of Pinot Noir. On the palate: fresh citrus and white peaches in syrup.

The Albert Bichot domaine is located in Beaune, Burgundy. Roussanne is prized for its richness, structure, ageability and flavors of honey, spice and mineral. Tablas Creek ferment and age their Roussanne for nine months in a mix of small wood, large neutral casks and stainless steel.
The wine displays a deep straw color. There is a very recognizable Roussanne nose: fresh honey, pear, brioche and crushed slate. The broad, well-balanced palate offers tropical fruit, pear, honey and good minerality.

Domaines Ott was founded in 1912 by Alsatian engineer Marcel Ott. He bought several estates and began renovating them with the determined ambition to create great Provençal wines from noble grape varietals. These wines are made at three distinctively different estates: Château Romassan (Bandol), Clos Mireille and Château de Selle (both Côtes-de-Provence).
Château Romassan is located in the Bandol appellation and lies at the foot of the village of Le Castellet. The soil is poor, composed of limestone, sandstone, and marine upper cretaceous marls. The Bandol appellation is known for its terraced landscapes built from the hard stone with vines, which are planted into vast terraces with varying exposures. The sea air from the bay of Bandol compensates for the terroir’s acidity and low rainfall.
This 2021 reveals a light peach color with aromas of peach, strawberry, grapefruit and spices. The medium-bodied palate is silky in texture, offering flavors of blood orange, peaches, strawberry, spice and mineral. Densely packed and showing fresh acidity, this wine ends very long on the finish.
