Hidden in a corner near the walkway to Mandalay Bay's Convention Center, this lively yet elegant 65-seat steak and seafood emporium sports velvety red banquettes and walls adorned with glass-enclosed wine racks. Dinner begins with a basket of lavosh and rolls on a hot stone---a nice touch. Unique in a fine dining ambience is the mac and cheese appetizer, gifted chef Scott McCarter's delicious combination of Maine lobster and orecchiette pasta in a Taleggio-mascarpone cream, topped with truffles. We also like his seared foie gras with brioche french toast and dried fig-and-cherry chutney. The tantalizing tower of Hawaiian ahi tuna tartare marinated with citrus-ginger soy is served on avocado-papaya couscous. A house specialty, sautéed Dover sole comes with asparagus, morels and lemon beurre blanc. Saké-tamari-marinated Chilean sea bass is accompanied by green onion basmati rice. In addition to the steaks, meat eaters like the rack of Colorado lamb basted with honey mustard and pecans, and the grilled 14-ounce bone-in veal chop with wild mushroom-chèvre spätzle. Among sublime desserts is the peanut butter custard on a chocolate cookie with caramelized bananas, chocolate shavings and vanilla sauce.
