New York, especially the Village, may have Italian food glut but every now and then a restaurant comes along, twists the genre, and makes it feel new again. Chef Sarah Jenkins works such magic at this brick-lined, candlelit spot, with unique dishes such as spaghettini in red wine, a pleasantly acidic, citrusy surprise. While the burgundy-colored noodles may startle at first, the real shocker comes when you realize you're savoring the last bite. And pastas aren't the only plus: Jenkins culls full flavors from comfort classics like guinea hen enhanced with lardons and apple-tinged suckling pig, proving her culinary conjuring is no illusion.
