Located behind an unassuming blue door in the 10th arrondissement, chef Katsuaki Okiyama’s twenty-seat restaurant serves up innovative Franco-Japanese cuisine with an emphasis on fresh ingredients. Seasonal dishes range from parsnip velouté with an apple-pear emulsion, to grilled yellow pollock with Chinese cabbage in smoked-salt butter sauce. Insider tip: On Mondays and Saturdays, chef Okiyama prepares his signature gourmet sandwiches. Don’t miss out on the tonkatsu pork (kimchi omelet, melted cheese and umami sauce on toast).
