Cutting-edge chef Stephan Pyles, after defining Southwestern cuisine in Dallas, turned his attention to seafood in this beautifully designed ocean-themed place in the trendy Knox-Henderson neighborhood. The menu shows hints of his Southwestern background---serrano chiles in the gazpacho, jalapeño-spiked croutons on the Caesar salad---but it also displays his growing interest in Asian cuisine, with dishes such as sticky rice tart and Vietnamese Imperial rolls with green papaya salad and spicy peanut sauce. His Asian cuisine is now so popular, in fact, that is naming the always-packed bar area Fish Bowl where hes introducing a hip, 60s look and a Pan-Asian menu, complete with tropical drinks (think Trader Vics), beer, sakes and wine. In the meantime, AquaKnox continues to serve favorites like its beautifully presented wonton flowerpot, a fried wonton pot filled with greens dressed with a citrus ginger vinaigrette and candied pecans. Appetizers, like the stir-fried black mussels with grilled plantains, pineapple, coconut and toasted pepitas, are uniformly pleasing.
