An haute après-ski theme takes you from Manhattan to Aspen with the swing of a door. Aspen’s snow-laden forest theme dining room only feels a little incongruent when it’s 100 degrees outside. But that doesn’t stop the yuppies from snow-plowing into the front-room bar area to sip its inventive cocktails. There’s also room to gather in front of the open fireplace to enjoy the small plates menu, labeled “modern American with a western twist,” which boasts a few items that would warm us up on the coldest day. Try the bison sliders, terrifically tender and juicy, or the pan-fried brook trout tacos. Another post-ski hit: the huge grilled pork chop with fingerling potatoes.
