Chef Eric Bost (République, Restaurant Guy Savoy in Las Vegas) is striking out on his own with auburn. Klein Agency designed the space to highlight natural materials and custom furniture and hardware from local craftsmen. (The address was previously the home of Hatfield’s, and before that Citrus from the late chef Michel Richard.) Diners choose between menus of four, six or nine courses, featuring dishes such as Sonoma duck with sprouted rye, black garlic, cicoria rossa and amaranth.
