This lover of bull fights (witnessed in the décor) has defined his own standard of quality. Pheasant consommé dotted with chestnuts; foie gras spread on warm cornbread; savory Pauillac lamb in a tight, sapid jus; a robust garbure (cabbage soup) with duck confit; slow-simmered veal shank that is lacquered on the outside and tender within --- all these dishes brim with vigorous, exhilarating flavors. The exciting cellar harbors a motherlode of wines accented with all the grand Bordeaux and sprinkled with some unforgettable Jurançons and Armagnacs. A lunch menu is offered for €60.
