CLASSIC FRENCH RESTAURANT LE PERIGORD HAS CLOSED. Georges Briguet, New York's iron host, has 18 tuxedoes. The affable and witty Briguet opened Le Périgord on April Fool's Day, 1964, and remains its formally clad front man. Executive chef and Le Périgord veteran Joël Benjamin maintains the concept of freshness as a centerpiece of Le Périgord cuisine, whether in the delicate turbot with a golden crust of Comté cheese and velvety Champagne sauce or grilled filet mignon with black truffle sauce. Two foie gras dishes are available: cold house foie gras with Sauternes aspic, and warm foie gras with seasonal fruits. Well-seasoned staff showers attention on everyone there --- from fresh faces to its powerful regulars from the worlds of diplomacy and finance.
