At this Tokyo institution, juicy pork filet are coated with homemade bread crumbs, deep-fried in a special oil, and then served with shredded cabbage and a bowl of rice. It’s Japanese comfort food at its best, served in a former public bathhouse. You can still see the remnants of it in the main dining room, which has two doors next to each other, sliding glass doors that look out onto small gardens, and unusually high ceilings. The house specialty, black pig tonkatsu from Kagoshima and Okinawa prefecture, comes with its own special chunky sauce made from grated apples.
