The ever ebbing and flowing Manhattan restaurant empire of chef Michael ‘Bao’ Huynh has brought fans of Southeast Asian cuisine a standard but better-than-average Vietnamese eatery in the West Village. With a moniker that’s a play on the chef’s nickname as well as his birthday (November 1), Bao 111 has an interior design that’s simple and without any flourishes --- not unlike the menu. Huynh is quite proficient with classic dishes, but he isn’t trying to use any impressive trickery in the cooking as he has done in the past. Good crab and pork spring rolls are largely greaseless; juicy short ribs come on a skewer and are accompanied by a peanut sauce for dipping; and a coconut milk-based curry is bobbing with plus-size shrimp. Huynh also offers several variations on the banh mi sandwich.
