Owners Janice Henning and husband Tim Elenteny have brought their wealth of expertise to bear in a new D-town eatery thats created a buzz. Henning---a former student at CU Boulder---left the state for California to gain a culinary education. Its paid off nicely. Over the past few years shes cooked alongside some of the best chefs in Napa Valley, including Madeleine Kamman. Denverites are now reaping the fruits of her studies, which come to bear in eclectic dishes crafted with fresh regional ingredients. Prince Edward mussels wade in a pool of red Thai curry soup, free-range chickens arrive Moroccan-style, blessed with lemon preserves and lentils. Duck confit rests atop a pillow of Yukon Gold mashers, tucked beside stewed apples. Braised short ribs are the star of the comfort foods list, that changes daily with inspired specials. Elenteny---whose pulled corks with some of the wine trades biggest gurus---emphasizes a broad list of wines that includes some more obscure (and very tasty) vintages. We stretch out on his list of champagnes, caviars and small niche cheeses.
