Proving that times change tastes more than chefs do, Anthony Ambrose---a chef-owner who once symbolized the '90s over-the-top cooking movement---has taken the middle ground between chains like Legal Seafood and upscale ventures like Great Bay. The flagship Hingham location, occupying an old sea captain's home, proves a nautical theme isn't antithetical to refinement. As for the menu, giant cuts of dry-aged steak, swordfish chops and creative sushi and appetizers play up Ambrose's bold American ideas with the occasional Asian accent---this is surf 'n' turf with style. It's a democratic second act from Ambrose, and a gutsier move than any of the vertical plate arrangements or daredevil combos he once slung in his youth.
