New York hip is on the Strip. A big high-style cousin of the China Grill in New York, this restaurant boasts a flashy design and dramatically presented, imaginative dishes done on the grill or in giant woks. For starters, we like the lobster pancakes stir-fried with wild mushrooms, red chili, scallions and coconut milk; and the Kobe beef tartare with Chinese mustard sauce. Salad favorites include Confucius chicken with sesame oil vinaigrette, Peking duck with tangerine orange sauce, and crackling calamari with lime miso dressing. Imaginative Asian pastas include the outstanding grilled garlic shrimp with black fettuccine and red curry coconut sauce; and wild mushroom profusion pasta with saké-Madeira cream sauce. Pan-seared duck breast with caramelized Asian fruit salsa and lychee black vinegar reduction is a favorite. Among China Grill's signature desserts are bananas in a box---caramelized bananas in a caramel box with a rich caramel crème; and the chocolate seduction---chocolate gratin with currants, hazelnut and chocolate mousse, white chocolate ice cream, a chocolate-coconut sushi roll and a peanut butter cone with a crème brûlée center.
