As Portland chef Thomas Hurley's first foray into the Seattle market, Coupage boasts a Euro-Asian menu where fusion cuisine is taken to grand heights. Can't decide on just one or two starters? Choose a meal of small plates instead. A dish of pine needle-cured Arctic char with pickled honshimeji mushrooms and soy daikon vinaigrette dances on the palate, while a lemon grass-accented vichyssoise delights taste buds with morsels of Dungeness crab cake "croutons." Main courses such as the Coupage burger topped with seared foie gras, red onion kimchi and tomato confit, or "crispy on the outside, moist on the inside" whole roasted chicken with foie gras-truffle vinaigrette do not disappoint either. If you're the adventurous sort, dessert might be in order. Treat yourself to the novelty of black sesame crème brûlée or a chocolate soufflé paired with chili ice cream. Should you pass, you're not missing out.
