An Allentown institution, Cybeles (pronounced sibble-ease) recently moved about 100 feet into a spacious location, almost every inch of which is covered by local painter Peter Fowlers dynamic brushwork. Mismatched tables and chairs add to the overall impression of an eccentric establishment. The food emphasizes healthy and fresh ingredients, three meals a day. Buffalo eggplant wings and Thai veggie fritters make good appetizers, along with the ever-changing special salads. On our last visit, the special board featured field greens with red cabbage, raisins, mango, pineapple, a curried vinaigrette, and fresh raspberries. Spicy, herbed entrées are common, including our favorite, ropa vieja: slow cooked beef with chipotle chilies and tequila, homemade tortillas, and beans and rice. Cybeles healthy streak does not mean you cant get bacon or eggs Benedict for breakfast. They can be had as well as, for the adventurous or indecisive, the Cooks Choice omelet. Service has been known to occasionally frustrate anxious or hurried customers, but for the rest, a wait can be a pleasant part of a good meal.
