A new ownership group has taken over the short-lived David Bouley Evolution and the restaurant is expected to open soon as David Bouley at South Beach. The menu will be similar to that of Upstairs at Bouley Bakery in New York, which features an eclectic array of smaller plates from sushi offerings to burgers and Japanese-influenced fish dishes.
