DOMVS, the Italian Restaurant Restaurant Review:
It can no longer claim to be purely Sicilian nor the only restaurant in town offering such cuisine; indeed, DOMVS has evolved yet retains a loyal clientele. The décor remains classic with its neutral palette against flowing drapes and wooden armchairs with red leather padding. In the show kitchen, Singaporean chef Ee Ming Hwa displays his skill with Sicilian fare through a glass-lined picture window that doubles as a wine rack where all the labels are Italian. Dishes stay true to his signature style that utilizes fresh ingredients, as in the smoked ocean trout carpaccio with mixed fruit salad in wasabi balsamic. Follow that up with homemade squid ink tagliolini with bacon and squid in spicy tomato sauce, the tender lamb with garlic sauce or the veal ravioli. For meat lovers, the chef recommends his Kurobuta pork loin marinated in a secret sauce and served with an ever-so-slightly tangy apple tonka purée. Dessert lovers can indulge in the warm chocolate lava cake with Earl Grey ice cream to end a lovely evening on a sweet high note.
