Even the value-priced tourist hotels in Las Vegas sometimes create a gem you don't expect, and Embers is The Quad's (formerly the Imperial Palace) entry in that sweepstakes. The fireplace makes for a romantic atmosphere, the steaks are flame-broiled and succulent, and the rest of the menu is basic old-fashioned continental with a touch of nostalgic snob appeal. We like the lobster bisque with chunks of lobster meat. Go for the salmon scampi with artichokes and mushrooms. You can't go wrong with classic steakhouse selections such as 14-ounce cuts of salt-roasted prime rib served au jus and with horseradish, or the hearty 16-ounce rib-eye. The Black Forest cake is a winner.
