The last thing pizza needs is another make-over, but Emmas Pizzeria in Cambridge has figured out just how to nip-and-tuck a pie to perfection. In a room decorated with hand-painted pizza boxes, mobiles, and kiddy art that say things like Elvis Lives, owners Wendy Saver and David Rockwood pour years of experience into the daily production of one mean pie. Emmas is so popular that people actually reserve pizzas in the morning to be picked up that night. Hard-core devotees still prefer the counter: An only-in-America stew of Cambridge geniuses, factory workers, chefs, artists, coaches, teachers, you name it. As always, the secret is in the crust: Wafer thin, cracker-crunchy and faintly sweet. Cheeses are divided into goats, cows or sheeps; toppings like scrod, caramelized onion and sweet potato number in the dozens. Make your own or order a Mystery Pie.
