Etch Restaurant Review:
For years, Deb Paquette helmed the beloved Zola, a Mediterranean fine dining restaurant that closed in 2010. With Etch, she returns to the Nashville scene with her familiar globe-hopping touch. The menu is short but well-traveled: there’s Moroccan-spiced venison with sweet potato guava and cranberry sumac relish as well as porcini-dusted pork tenderloin with manchego, chorizo and truffle oil. For an appetizer, try the ponzu-graced seared tuna or the “ratatouille” crudo with a carpaccio of zucchini, carrots and a bevy of more fresh vegetables. Desserts include a Meyer lemon frozen mousse with goat milk caramel. The wine list is well-stocked but manageable. The central location downtown is perfect for a pre- or post-show dinner.
