Jefferson would be proud of this Colonial bleached-wood setting dominated by gray and tan accents. A popular and quiet dining destination, this revision of the earlier Palette restaurant features meals that would resonate well with an earlier America. Starting with the Monticello salad --- a colorful mélange of mixed greens, slivered beets and a toss of English peas --- you can proceed to a dinner entrée of Angus beef short ribs, jumbo lump crab meat or roast duck breast. Luncheon fare tends to be less showy, and you may find that the chef’s rare hamburger of Martin’s farm Angus beef with a red onion confit and a side of fries suits the day. You could opt for rockfish or perhaps slow-cooked lamb, but you will probably want to accent the dish with a side of fricassée of wild mushrooms. Desserts have few ties to the Colonial era, with a lemon verbena panna cotta leading the way.
