In the hands of Pierre Gagnaire, the menu at Gaya highlights seafood, although land-based fare is present as well. Guests may encounter dishes such as egg casserole with langoustines; Parmesan bouchot mussels with shrimps; and andouillette Duval. Among the desserts is an apple puff tart complemented by whipped cream. Other attributes include a bar for a drink or lunch on the run, and an eclectic wine cellar.
