A chic conservatory of cuisine bourgeoise is offered here. Polished classicism, not innovation, is Besson's signature. Take your choice of sweetbread and chanterelle mushroom puff pastries, Dieppe-style thinly-sliced sole, rack of lamb with parsley, and carmelized feuilletage with strawberries. Splendid cellar, but too few half-bottles.
