Jet-lagged diners are invariable advised to start with fried egg whites, scallops and lady bell root believed to stimulate the body’s energy source known as ‘qi.’ A resident herbalist whips up organic remedies made from dried caterpillars and pickled seahorses, which are added to dishes like the double-boiled snow frog glands with rock sugar, said to improve liver and kidney functions. Other restorative dishes will appeal across a broader spectrum of palates, like the chicken chopped with pandan leaves, chili prawns with walnuts, and spare ribs in fragrant rice wine. The olive and vegetable fried rice is tasty, while at least curing a rumbling stomach.
