Woodstock, Vermont is one of several towns in New England that looks as if it had been crafted by artisans to epitomize the gentle charms of the region. One of the best places in town to stay, The Jackson House Inn, just happens to include one of the best restaurants in Vermont, under the direction of chef Jason Merrill. You'll find a meal here fully representative of the best aspects of modern New England and American cuisine. Dry-cured yellowfin tuna is paired with heirloom tomato confit, basil foam and Parmesan panna cotta. Hand-harvested sea scallops are served with forbidden black rice, and NY strip au Chile gets a side of purple Peruvian potatoes. The restaurant's wine list has enormous breadth and depth, particularly impressive in American Chardonnays and white Burgundies. There are plenty of good selections under $40.
