Jean Bardet is a real gardener, and he grows his own vegetables and herbs. He can coax delectable nuances from his better-than-prime ingredients, and we admire his fine-tuned taste and fine-honed technique. Bardet is an alchemist when it comes to sauces, an artist who creates compositions of rare beauty. Try dishes like the Loire pike perch with vegetables and chardonnay velouté, Fez pigeon in pastilla with apricot moelleux, locally-raised guinea fowl suprême, and sweetbread shepherd's pie with foie gras. Oh, and his cellar! It's immense, with a wealth of rare bottles from all over France and some affordable Loire wines, too.
