Afghan cuisine combines the flavors of Turkey, Greece and India and then adds its own spices. The results, as youll learn from dining at Kabul, are interesting. Consider an appetizer such as pakawra e badenjan, chunks of eggplant dipped in a light batter, then sautéed to crispness and garnished with the contrasting tastes of yogurt and meat sauce. The lamb and chicken entrées are reminiscent of Indian-style tandoori cookery: tender meat seared on the outside, moist and delicate within. The kebabs, especially lamb, are tender and cooked to order. Vegetarians will revel in the wealth of choices, including pumpkin dumplings in yogurt and a stew of spinach, garlic and onions.
