Perched on lava cliffs on the quiet end of the vast Hilton Waikoloa Village resort, this steak-and-seafood restaurant captures unforgettable ocean views---whales in wintertime, green-flash sunsets. This is the place to relax on the terrace, with a glass of good wine from the wine bar. To complement the scene, we love the Eight Bites appetizer selection that includes lemongrass-poached jumbo shrimp and poblano crab relleno. Actually, we love the appetizers---try kalua clams with lup chong---as much as the main menu: Entrées range from signature steaks, including a hefty 18-ounce porterhouse to braised short ribs osso-buco-style and macadamia nut-crusted Hawaiian snapper. The name of this restaurant is carried through with the décor---an ersatz country ranch store.
