The former Scottsdale Resort and Conference Center was an icon, opened in 1976. A 2015 purchase by Destination Hotels & Resorts brought a $10 million upgrade, and a new restaurant that takes over a former bar and lounge on the lobby level. Executive chef Rick Dupere delivers a modern interpretation of American Western cooking, anchored by a demonstration kitchen showcasing wood grills and ovens, and glass walls overlooking the plush gardens and golf course. Meals take a rustic chic course, like crisp-moist chorizo hush puppies for dunking in poblano garlic dip, meatballs tricked up with mole alongside cilantro carrot slaw, and brick chicken paired with farro, kale-grape salad and toasted pinion nuts. Desserts charm with simpler bites like cherry cobbler topped in fresh-spun vanilla crème ice cream. As a finishing touch, each diner receives a farewell caramel, crafted by The Simple Farm, a Scottsdale goat ranch.
