Cristina Egal has sold her second-floor restaurant near the Madeleine to Andreas Mavrommátis. This Cypriot, who adopted Paris as his home, creates a balance between gourmandize and simplicity. The menu invites diners to experience not only his country and its fragrances, but the colors and flavors of all other Mediterranean countries: Pata Negra cured ham, tabbouleh and hummus. However what his clients enjoy most are the roasted bell peppers and piquillos, the moussaka, Octopus and ktipiti, stifado, a casserole of confit of lamb with shallots, sheep yoghurt with thyme and honey as well as a milkshake of roasted nuts. Andreas is a great professional and has revolutionized Greek cuisine by bringing in French culinary technique.
