In the heart of Left Bank Paris, Yves Camdeborde, formerly of La Régalade, and his wife preside over the Hôtel du Relais Saint-Germain and its restaurant, Le Comptoir du Relais, a sophisticated bistro with Art Deco details and a terrace that spills out onto the busy Carrefour de l'Odéon. The enviable location draws crowds composed of Saint-Germain's literary and artistic elite, a young and trendy contingent, as well as Camdeborde's faithful followers, delighted to partake of the chef's signature refined Southwestern French country fare. Camdeborde, who was once part of Christian Constant's team at the Crillon, turns out quality fare with the menu-carte (€60) that includes a porcini mushroom foie gras, brandade, deboned pork feet in gratin, and chilled aromatic broth with wild strawberries and watermelon. It's Camdeborde's wife that decorated and directs the charming hotel where a legendary breakfast is said to be reserved for privileged hotel guests.
