Cédric Tessier, the ex-partner at Michel Rostang, decided to leave and modestly set himself up on rue Claude Bernard in the 5th arrondissement. The menu at Le Tourbillon is testimony to the skills acquired by the chef while working with a leading name in the industry: a notable terrine de campagne and a subtly flavored appetizer of octopus with saffron and olive oil with mashed potatoes can be found here. The pork spare rib with honey and rosemary with a purée of carrots strikes a fine balance between sweet and spicy, whereas the gratinée of monkfish and cream of lobster with baby vegetables lends an iodized flavor to the menu. A well-chosen wine list accompanies the warm and smiling welcome.
