Hervé Liégent, debonair chief boasting a beautiful moustache, puts his heart into this establishment dedicated to champagne and the Champagne region (take a look at his museum with its unique collection of posters). The kitchen is not always as relevant as the wine selection (even if comments on the cellar are quite difficult to obtain), but the foie gras and Pommery 61 gelatin, the beef rib with mushrooms, and the champagne sorbet are all good bets.
