Like its Aspen sibling, Matsuhisa Vail represents the pinnacle of chic among actual pinnacles. The clean lines and natural materials of the dining room and bar reflect the sparkling view outside and the Japanese-style minimalism of the menu. Beyond the sushi and sashimi that made chef Nobu Matsuhisa a household name worldwide, the food is elegantly simple. Try pumpkin or oyster tempura, clam miso soup and the signature shaved ice for dessert, accompanied by either imported beer or premium saké, whether straight or in a seasonal cocktail. Or just order omakase and prepare for a wild and wonderful ride of surprise bites, perhaps paired with a bottle of wine from a naturally weighty list.
