Pick your pleasure at this country cousin set in the rolling farmlands of northern Baltimore County. Gussy up for a night on the town as you are pampered in vaguely Colonial surrounds. (The building had its beginnings in 1750, as a stable.) Or don your Dockers and catch a buzz from the lively bar scene as you cozy up to a blazing fireplace and dig into a juicy burger. Now under a new management team, the Tavern is committed to eats as sustainable and locally grown --- there’s an organic garden right on the property --- as they are tasty. If you choose to dine fine, your options include such choices as pan-seared jumbo scallops and Verdant Valley Farms braised barbecued pork atop fried green tomatoes, and cedar-plank salmon finished with a honey-mustard glaze. Even the casual fare is farm-to-table stylish; that burger is made of Gunpowder bison and served with roasted garlic cream cheese, arugula, apple wood-smoked bacon and truffle oil.
