About the restaurant: Expect the unexpected at this vibrant citified bistro with a kitchen overseen by chef Mike Winston that turns out innovative dishes that pair Americana with global accents.
Food & Drinks: We like the Thai pork sausage paired with sriracha aïoli and a daikon relish, the messy-good short ribs with black pepper spätzle, and the chicken and dumplings punctuated with Brussels sprouts and ham. Daily specials are written on a large chalkboard that hangs above the copper-trimmed bar, separating the open kitchen from the small dining room. Don't skip dessert --- hot, miniature beignets that reveal molten chocolate. A lounge area to the left of the main entrance features a communal bar that seats 15 (usually folks sipping wine while waiting for a table). The 80-plus-bottle wine list, overseen by master sommelier Aaron Forman, is one of the best --- and most eclectic --- in Denver, trumpeting all small production vineyards and more than a dozen pours by the glass. There's also a beautifully crafted reserve list called the Wine Book.
