Toast Restaurant Review:
The only paninoteca in the Triangle attracts hordes of foodies at the lunch hour in bustling downtown Durham. You can expect to wait in line to order at the counter on a weekday, but the soups, salads and sandwiches made by chef/owners Billy and Kelli Cotter are well worth it. Panini favorites are the soppressata, Fontina and arugula, and spicy tuna with olivada and fennel. Toast also offers tramezzini (soft cold sandwiches), including the cured salmon with red onion and lemon aïoli, and a variety of crostini such as chicken liver with pancetta and pickled fennel. Toast’s humble green salad is dressed with shallot vinaigrette flavored with fresh oregano and mint. Italian sodas are available as well as beer from local microbreweries and some nice Italian family estate wines.
