With a gravy train of tony, urban settlers camped all around him, chef Michael DeMaria's Citadel restaurant is truly a fortress of fine dining on Scottsdale's posh, Northern frontier. Amidst a serene, Sonoran desert setting, this sprawling complex of elegant, private and semi-private dining rooms and patios (which feature nine fireplaces) makes for a stunning complement to Michael's signatures such as cinnamon roasted duck and foie gras with apples, blackberries and Chinese long beans, or olive-seared Chilean seabass, Niçoise-style. Customized (to your tastes) five- and seven-course menus range in price from $75 to $125 per person, exclusive of wines paired from DeMaria partner Harlan Berman's well-stocked wine room (ask for a tour). Whatever you do, don't miss the outdoor patio upstairs at the bar.
