Monarch has spread its wings in a different direction: southward. Chef Josh Galliano turned the café into a Southern Bistro, which gives the Louisiana native space to show off his gumbo, root beer and hush puppies. The dining room remains more formal, with celadon walls, wisps of fabric hanging from the ceiling and a glass-walled wine cellar. Galliano is big on local produce, so it stands to reason that the menu is quite vegetarian-friendly. Meat-lovers should go for the house-made charcuterie or short ribs, both of which are almost always on the menu. A culinary dictionary may come in handy at times (the cumin-roasted shrimp, for example, is accompanied by black garlic romescu, Marcona almonds, cauliflower "fregola" and panisse). Fortunately, the servers are well-trained, and it’s not unusual for Galliano himself to serve the main courses and answer questions. The wine and cocktail lists are, as one would expect, first-rate.
