Chef René Redzepi has learned the tricks of the trade from serving in a variety of renowned kitchens around the world (elBulli, The French Laundry, Jardin des Sens). Appointed ambassador for the New Nordic Food program by the Nordic Council of Ministers, Redzepi cooks up regional cuisine using many techniques (pickling, salting, smoking, etc.) in this restored waterside warehouse that's been modernized by interior architect Signe Bindslev Henriksen. Many of the menu's ingredients are foraged from the land or come from other countries in the Scandinavian region and are presented in dishes like Mahogany clams with grains and buttermilk.
