For terrific kebabs, head straight to Pars in Fairfax, a low-key, diner-restaurant featuring a quirky metal statue of a grillmaster out front. At lunchtime, there's a nonstop buffet selection of two kebabs plus assorted other Persian fare. We vote that the ground-beef kebabs are some of the area's finest; the juicy, tender chicken kebabs run a close second. The glassed-in tandoori oven is right up front, so you can watch your kebabs and puffy breads cooking to order. If you don't mind Saturday night mobs, come for the weekly special, baghali polo, a tender lamb shank with baby lima beans and basmati rice. To finish, the rose water-scented Persian ice cream is sublime.
